Mandarin For Beginners: PinYin Approach (Yipin Courseware)

Mandarin for Beginners: PinYin Approach (yipin Courseware) is a courseware developed to assist the non-Chinese speaking learners to learn Mandarin language using PinYin approach. This courseware adheres to the UiTM Mandarin language course syllabus with additional interactive learning materials. The development of this courseware is under the supervision of experienced Chinese language lectures at UiTM Terengganu to ensure that it is suitable for all beginners. This courseware also caters the problem of inadequate lecturers by providing additional audio visual learning materials for listening and speaking practice. This courseware has high commercial value as it is suitable for all learners that are from primary schools, secondary schools, higher institutions as well as working adults. They may use it in a self-pace learning manner. This courseware also has the potential of being the templates in future development of related courseware for upper levels of Mandarin learning as well as the teaching of Mandarin for specific purposes such as business, accounting and computer studies.

UiTM Terengganu is no exception; it is a campus that organizes many events and activities and the pictures captured document UiTM Terengganu's evolution. But, over the years, these pictures have accumulated tremendously and managing them is not easy. Thus, the Sistem Lensa Kamera (Lensa) is developed. The Lensa is an online application which is developed to store and systematically manage the huge number of picture taken in UiTM Terengganu.

Banana Kaya with Chocolate

Banana (Musa Cavendish) contains Vitamin C, potassium and dietary fiber. Bananas do not contain sodium, fat or cholesterol. The Vitamin C, which is found in bananas, helps the body to defend and heal against infections. A diet rich in potassium is said to reduce the risk of hypertension and stroke. As bananas are free from sodium and very rich in potassium, they can be included in the diet to reduce the risk of high blood pressure. It also gives an instant and substantial boost of energy. Another ingredient is chocolate that is clearly an energy-dense food and high in antioxidant. Interestingly, food chemists have found that chocolates are especially rich in the large procyanidins, which are present in much smaller amount in tea and some other plant foods. Report suggests that chocolate contains large amount of flavonoids, especially epicatechin that may have protective effect against cardiovascular diseases and possibly cancer. The study concludes that company can offer similar texture attribute to those customers who wish to enjoy banana taste and the nutrition value benefits. The purpose of using banana and chocolate as the main ingredients in this preparation is to create uniqueness of kaya in the local market and enhance its usage.

The OKRA Flour

This study invented flour from mature okra. Okra, locally known as Lady's Finger, can be found easily in Malaysia, Thailand, Vietnam, Indonesia and the Philippines. Rich in calcium,this vegetable consists of 90% water, 7% carbohydrate, 2% protein and 1% fiber, traces of minerals and vitamins B. But the shortcoming of okra is that it matures too fast. It turns tough and inedible that it eventually be toosed as food waste. Thus tis study processed mature okra into flour. Other than introducing a new type of flour, this invention also may stabilize the price of okra in the market. Okra farmers may venture into okra flour making for export.

Frozen Malay Kuih An Application of Dicaccharides to The Textural Properties and Sensory Characteristic of the Malay Kuih

"Kuih" is the term given to bite-sized food items in Malay Archipelago. Malay kuih can also be described as pastry; however it is different from that of the Western one. Malay kuih are more often deep-fried and steamed than baked, and thus very different in texture, flavor and appearance from the western cakes of puff pastries. Kuih are not confined to a ceratin meal but are eaten throughout the day and served fresh. However, certain types of kuih can be prepared in advance by freezing and seem more convenient than the kuih prepared a la carte. In this study, the textural properties and sensory quality of the kuih showed similar characteristics as a fresh one. To do that, special formulated sugar starch been added to preserve the texture of frozen kuih by protecting them from drying or freezing and its ability to suppress bitterness, stringency and harsh flavors.

fROSHi-Frozen Sushi

fROSHi is a frozen sushi, a product of applying disaccharides to the textural properties and sensory characteristic of frozen sushi. Sushi is vinegared rice, usually topped with other ingredients, including fish, various meats, and vegetables. Sushi originated from Japan and recently being popular all over the world. Most sushi are prepared and served fresh to ensure quality and sensory characteristics. Preparing sushi is time consuming and requires skills. In contrast, frozen sushi can be prepared in advance and seen more convenient than freshly prepared sushi. The textural properties and sensory quality of 'fROSHi' show similar characteristics to that of a fresh one. To do that, special formulated sugar starch was added.
