Jackfruit seed flour resistant starch was analysed as dietary fibre by the AOAC method. Modern processing conditions in general did not affect the total dietary fibre level of jackfruit seed flour. So manufacturers and consumers would get the fibre as expected. The bread gave an outstanding eating quality in terms of colour, taste and high in fibre and virtually fat free (<1%)
